You may have enjoyed this delightful appetizer but have you ever wondered what caviar is? Well it is the salted eggs of large fish like sturgeon. There are a lot of species of fish that are commonly called as sturgeon and all of them are used in making caviar of different grades. Caviar has a strong taste and is usually garnished with other things to dilute the taste although some purists firmly believe that they should be taken without mixing it with anything.
One large fish can give a large amount of these eggs. After processing, they are usually served in small portions. As it should be served at a particular temperature to be enjoyed the best, it is often placed in a two piece serving dish where the bottom part has ice and the caviar is placed on the top part. They are of two types, black and red caviar.
